California Almond "Hiking Bars"

1/2 cup Butter

1/2 cup Brown Sugar

1/2 cup Quick Cooking Oats

1/2 cup White Wheat Flour ( unsifted)

1/2 cup All Purpose Flour ( unsifted)

1/2 cup Wheat Germ

2 tablespoons grated California ORANGE RINDS

2 Eggs1 cup whole blanched California Almonds

1/2 cup Raisins

1/2 cup flaked Coconut

1/2 cup semi-Sweet Chocolate Bits

Cream butter with 1/4 cup brown sugar until soft, beat in oats , flour, wheat germ and orange rinds.  Put into 9-inch square pan.  Mix eggs, almonds ,raisins , coconut, chocolate bits and 1/4 cup brown sugar ( packed).  Pour onto base and spread out evenly.  Bake at 350 degrees F for 30 minutes ( or until almonds are golden brown).  Cool and cut into a dozen bars.  Wrap in aluminum foil.

3 chocolate California Almond Bars

1 can ( 3 ounces) Chow Mein Noodles

2 tablespoons silvered California Almonds

Melt almond bars in top of double boiler.  Stir in chow mein noodles and slivered almonds ( toasted and chopped).  Form into clusters and onto wax waxed paper.  Chill.  Garnish with bits of candied ginger.

Heat water to boiling and pour over shelled almonds.  Let almonds set half an hour in water.  Drain and slip skins off.  Cut nuts lengthwise into several strips.  To brown slivers place in baking pan in oven, or brown slightly in butter.

8 ounces semi-sweet Chocolate

1/2 cup superfine Sugar

1 cup roasted California Almonds (diced)

1 EGG ( slightly beaten)

Melt chocolate over hot water.  Add sugar, almonds and egg.  Mix thoroughly.  Turn out onto a pot of powdered sugar on a piece of foil or at the worst plastic saran wrap.  Pull up the sides of the foil to help coat mixture with powdered sugar and shape like a sausage.  ( 1 1/2 inches in diameter about 12 inches long).  Chill thoroughly.  To serve, cut thin slices .  ( Makes 48 slices).

1/2 cup mild flavored Honey

1 teaspoon Cinnamon

In small mixer bowl. cream butter until fluffy.  Continue the creaming process, while adding Honey in a thin stream.  Store in refrigerator .  ( for added variety , try adding 2 tablespoons fresh Lemon Juice or Orange Juice) and 1 teaspoon grated fruit peel)

1/2 cups soft Butter  ( or margarine)

2.3 cups mild flavored Honey

2 Eggs

2 tablespoon Milk

1/2 teaspoon Vanilla

1/2 teaspoon Salt

1 teaspoon Baking Powder

1 teaspoon Soda

1 cup Flaked Coconut ( toasted)

1 cup mashed Bananas ( 2 or 3)

2 teaspoon grated California Lemon Peel

1 teaspoon California FRESH Lemon Juice

In large mixing bowl , cream butter.  Continue creaming while adding honey in a fine stream.  Beat in eggs one at a time.  Stir in milk and vanilla.  Sift flour with salt, baking powder and soda.  Add toasted coconut. Blend together mashed bananas , lemon peel and juice.  Add dry ingredients alternately with banana mixture, blending only until all dry ingredients are moistened.  Spoon into greased 9 x 5 x 3 pan.  Heat oven to 350 degrees F, and bake to 55 minutes or until loaf pan tests done.  Cool in pan five minutes.  Remove from pan and cool on wire rack.

Bread slices thinner if stored overnight or frozen.

1 can ( 15 ounces)  or 2 cans ( 8 ounces each) Tomato sauce with tomato bits

2 tablespoons Honey

2 tablespoons wine vinegar

1 clove Garlic ( finely minced) ( tops included)

2 tablespoons diced canned Green Chilies

combine all ingredients and heat .  Use as a muffin sauce.  May also be used as a chilled dip ( Makes 2 cups sauce)

1  EGG

1/2 cup Milk

1 1/2 teaspoons SALT

1/2 cup Paprika

1/2 teaspoon Pepper

1’2 cup Bread  Crumbs

1 lb Ground Chuck

In a large bowl , beat eggs slightly with fork.  Add milk seasoning, bread crumbs and meat.  Blend together lightly.  Put one teaspoon of zesty sauce in the bottom of six ( 3 inch) muffin  cups.  Divide meat mixture evenly into each cup.  Shape lightly to resemble muffins.

Heat oven to 350 degrees F and bake 20 minutes or according to personal taste.  Serve hot with additional sauce.
