San Joaquin Melon Salad
1 medium Cantaloupe
2 cups cooked Chicken
2 cups seedless California Grapes
1 1/2 cups diced Celery
1/2 cup Rich Milk
2 teaspoons Curry Powder
2 tablespoons Chutney ( chopped_
1/2 teaspoon Salt
1 cup Mayonnaise
Cut melon into 4 wedges . Next remove seeds. Run sharp knife between melon flesh and rind from one tip almost to the other. Cut chicken in bite sized pieces , combine chicken with grapes and celery. Add milk, curry , chutney and salt to mayonnaise and blend well and thoroughly. Pour dressing over chicken and chill. Serve chicken salad on melon wedges. Garnish with parsley . (Makes 4 full servings)
